test(coach): pin the workout launch's tenancy, closure and snapshot-once

Four suites, each mutation-checked against a reverted protection:

- route-workout-scope: the workout row is read exactly once across a ten-turn
  conversation that keeps sending the id, the where clause always names
  userId, another user's id resolves to nothing and the chat proceeds, and
  the section sits inside the health-data fence.
- workout-evidence: the numbers-only closure. An instruction-shaped
  sport_type — reachable through the restore path, which types the column as
  free text — folds to "other" and never reaches the block; a free-text leaf
  at any depth throws.
- page-launch-params: an unknown ?scope= is ignored silently, and ?workout=
  yields to both ?c= and the fenced ?doc= path.
- composite-score-anatomy-coach: every score sheet carries an opener, a
  scope narrowed to the composite's inputs, and auto-send.

resolveLaunchState's shape assertion gains the workoutId field.

/**
* v1.31.0 — the workout-scoped launch (`?workout=` / the detail page's
* "Ask why").
*
* Three contracts are pinned here, in order of how much they would cost if
* they broke:
*
* 1. SNAPSHOT-ONCE. The workout evidence is read and pinned on the FIRST turn
* only. If a later turn rebuilt it, per-turn work would grow with the
* conversation — which is exactly the cost the snapshot-once design
* removed. The multi-turn case asserts the workout read fires exactly once
* across a conversation that keeps sending the id.
* 2. TENANCY. The row is narrowed by `{ id, userId }`. Another user's workout
* id therefore resolves to nothing, and the conversation proceeds on the
* standard snapshot rather than leaking a foreign session's numbers.
* 3. The evidence rides INSIDE the fenced snapshot payload, so it inherits the
* data/instruction contract the fence states.
*
* Mock scaffold mirrors route-snapshot-once.test.ts so `../route` imports
* cleanly.

* - `?workout=` seeds the workout scope, and yields to `?c=` (an existing
* thread) and `?doc=` (the hardened fenced transport, which must never be
* diluted by a second scope).
*
* The conversation surface is stubbed to a probe that records the props it was
