Marc-André Bombeck 639b211ca4 refactor(openapi): drop the pre-split medications and insights route files ...

The split commits added the directory barrels but left the original
single-file modules in the tree; Node resolves the .ts file ahead of the
directory index, so the barrels were shadowed. Remove the originals so
the split modules are the live source.
