Marc-André Bombeck 6acc3a72df docs(api): document the Coach nudge-status and seen endpoints 
Add the GET /api/insights/coach/nudge-status unread signal and the POST
/api/insights/coach/seen open-stamp to the OpenAPI contract and regenerate
the spec.
