Marc-André Bombeck f6cf7c5e6b fix(docker): give the health check room for a slow migration ...

The entrypoint migrates before the server listens, and a migration that
waits out a held lock retries for up to about eight minutes, while the
health check marked the container unhealthy after two. The start period
is now ten minutes in the compose file and the image; the first answering
probe still ends it, so a normal boot reports healthy as before.
