Marc-André Bombeck 238aac85df docs(api): register Lab-OCR routes in the OpenAPI contract ...

Add the OcrCapability, OcrExtract, and OcrCommit operations under
/api/labs/ocr/* and regenerate the YAML. Document the multipart upload, the
untrusted-extraction contract, and the source OCR commit value. Mark the three
routes exempt in the module-route gate inventory under the labs data-layer
reasoning.
