Marc-André Bombeck 2ce9d4651d docs: refresh README screenshots from the 1.40.0 demo 
Recapture Insights, resting heart rate, Medications and Coach at the
same 2552x1308 frame. The resting heart rate shot no longer shows the
raw metric enum in the chart legend. Images are palette-quantised, about
a fifth of their previous size.

The current dashboard (demo account) replaces the pre-v1.16 capture;
the JPEG also weighs a tenth of the old PNG.
